Job Description

We are looking for a dynamic forward thinking sous chef with a winning attitude to work alongside our Executive Chef and run the Schpoons & Forx Restaurant located within the Iconic Hilton Hotel in Bournemouth.

Founded in 2015, Schpoons & Forx is helmed by Matt Budden and his unique take on the British dish. With over a decade of experience, Matt is held in high regard with some of Dorset?s finest purveyors of meat, fish and poultry.Combined with his highly skilled team, the restaurant delivers an entirely independent approach to British dining, only made better by the addition of the trademark Tandoor & a clay oven.

Your responsibilities as Sous Chef:

• Leading the Open Kitchen
• Acting as a role model for the team
• Monitoring stock and wastage
• Ensuring dating and labelling of produce
• Assisting the Head Chef in the scheduling, development and recruiting of staff
• Leads kitchen team in chef's absence
• Provides guidance to junior kitchen staff members, including, but not limited, to line cooking, food preparation, and dish plating
• Manages food and product ordering by keeping detailed records and minimises waste

• Works with head chef to maintain kitchen organisation, staff ability, and training opportunities
• Assists head chef with menu creation
• Coordinates with management team on supply ordering, budget, and kitchen efficiency
