Great opportunity for a permanent Sous Chef in a fantastic niche Hotel in Newbury, offering the chance to build your reputation and kitchen experience in an aspiring Rosette level restaurant brigade.
Former coaching inn turned 3-Star Hotel caters for breakfast, lunch and dinner.
Providing private functions and corporate event catering on site, as well as drawing in tourist trade and local dinners.
Increased private events, themed functions and corporate events, offering creative menus.
Renovations and modernisation work in the hotel and kitchen, were completed last year.
No Live-In opportunities are available, so relocators will not be considered, you need to be located within a commutable distance.
Key Features of the Role:
As Sous Chef you will be supporting the Head Chef and Kitchen Team.
Producing high quality menu items to discerning clientele to budgeted gross profit margins.
Hazard Analysis and Critical Control Points (HACCP), cleanliness, hygiene and food safety.
Sous Chef leading by example as a positive role model and mentor, helping others to understand and attain similar levels, through training and development.
Creative aspect of presentation, flavour matching, seasonality and technical ability.
Working Full Time hours 5 days a week, straight and split shifts depending on the kitchen requirement, the Hotel serves Breakfast, Lunch and Dinner service.
Knowledge and Skills Required:
Sous Chef must have fresh food experience, preparing food and cooking from scratch.
Experience working with sustainable local produce, ideally with a solid culinary background gained in a Hotel or Restaurant.
Essential you work across a range of kitchen stations, cooking for up to 200 guests.
Sous Chef with a recognisable hospitality qualification would be ideal.
Excellent, respectful communication skills are essential and team management experience in the absence of a Head Chef.
You must have dealt with HACCP, standards, cleanliness, hygiene and food safety, as well as training and development.
What’s on Offer?
Sous Chef comes with a basic annual salary package of £25,000 plus Tips.
Working up to 43 hours, 5 days per week across straight and split shifts.
Live-In option is not guaranteed or available at this current time.
Free parking. Hotel is within walking distance of the train station. Reduced group hotel tariffs. Group staff discount card for food and drink across the entire range of venues.
Full Time permanent position working in a progressive brigade kitchen and restaurant.
Career progression within the group and their multiple hotel and restaurant sites across the south coast.
20 days’ holiday + bank holidays.
