Juice Hospitality are proud to bring a new Executive Sous Chef position to the table.
This position is located in St Andrews, Fife and you would be working within a luxurious hotel and restaurant environment.
This specific hotel has a 5* grading and holds several accolades across the various dining options the offer which include bars, restaurant, private dining, conference and events and lounge menus.
Specific Responsibilities: To oversee your team and all production of menu items according to the venues accolades and standards. In addition management of behind the scenes duties such as:
Standards and Procedures: For example maintain the kitchen recipe manuals and SOPs to manage production, quality and consistency. To maintain the highest standards of food freshness and quality via daily checking procedures. Take corrective action when quality issues are bought to your attention.
To take control of planning for example monitoring national trends, understanding the events, functions and demands on your kitchen, staff management and Health and Safety.
Minimum three years Sous Chef experience in similar operation with proven ability to develop and manage multiple outlets over varying meal periods; or, single unit Head Chef experience with previous experience in five star Hotel operations
• Culinary Education and Intermediate Food Hygiene Certificate required
• Strong staff training / development experience
• Previous experience of menu planning desirable
