Executive Chef Job - Logistics Company - Somalia
Our Client is a privately owned international logistics, construction, procurement and facilities management provider.
They are specialists in providing their services in mining, oil and gas, post conflict, remote and other arduous environments.
Evolving from early roots in Africa over 40 years ago, our client has substantial experience providing integrated solutions and delivering comprehensive projects in mining, oil and gas and post conflict zones and developing countries and remote locations worldwide.
Headquartered in Dubai, they began serving clients in Afghanistan in 2002 and in the years since has grown into a large multifaceted firm, employing over 1,000 staff from 27 different nations. Today they manage projects in such locations as North Sudan, South Sudan, Sierra Leone, Kenya, Chad, Uganda and Somalia.
They are currently seeking an Executive Chef to be based in Somalia, Africa. The contract is initially for 12 months with extensions depending upon performance.
You will assist the activities of Junior Chefs and Associate Chef’s on how food should be presented, and create decorative food displays.
You will ensure proper portion, arrangement, and food garnish to be served.
You will monitor the quantity of food that is prepared.
You will inform Food & Beverage service staff of menu specials and out of stock menu items.
You will prepare special meals or substitute items.
You will assist Cooks and Kitchen staff with various tasks and will provide cooks with needed items.
You will monitor stock of kitchen supplies and food and will maintain kitchen logs for food safety program and food products.
You will ensure the quality of the food items and will notify Managers if a product does not meet specifications.
You will assist the Recruiting Officer in hiring, training, scheduling, evaluating, counselling, disciplining, and motivating and coaching employees.
You will follow all company and safety and security policies and procedures; report maintenance needs, accidents, injuries, and unsafe work conditions to supervisor; complete safety training and certifications.
You will ensure uniform and staff personal appearances are clean and professional; maintain confidentiality of proprietary information; protect company assets.
You will address guests’ service needs.
You will develop and maintain positive working relationships with others; support your team to reach common goals; listen and respond appropriately to the concerns of other employees.
You will ensure adherence to quality expectations and standards.
Knowledge and Skills:
You should be an energetic and accomplished English speaking Executive Chef with substantial experience, some of which should have been gained in remote sites or post conflict areas.
Ideally your practical experience should be supported by a technical, trade or culinary qualification in catering and hospitality.
You should be highly self-motivated with the ability to communicate and motivate a varied and large team.
You should possess excellent people skills, commercial awareness, budget and labour management is necessary, financial astuteness and good customer service skills.
Experience of working in contracted catering services, in a military environment or for a leading international facilities management provider would be ideal, as would experience of working in post conflict areas, remote sites or in other arduous environments.
You will have an excellent understanding of commercial catering operations and specifically a high degree of knowledge on food hygiene including HACCP, food handling and food presentation concepts and knowledge of popular catering and bakery products.
You should possess excellent verbal and written communication skills in English and ideally one other language, be able to adapt to rapid changes in a positive manner and work to tight deadlines.
Superb inter-personal skills and instant credibility are essential as you will be inter-facing with a number of people from different backgrounds, nationalities and religions.
You will be resourceful with a flexible outlook, have the ability to multi-task in order to handle competing priorities and be able to fit in to an international dynamic and multi-cultural environment.
Finally, you should possess a Drivers Licence and be PC / IT literate.
This is an outstanding challenge for an accomplished Executive Chef looking for something different.
The basic salary is paid in US dollars and is tax free for an Ex-Patriate employee.
A 12 month unaccompanied status contract is offered which includes free accommodation, laundry, local transport, insurances and meals. In addition, employees have the use of a phone to call family and friends and the internet for e-mails etc.
The R and R entitlement is 54 days and there are 2 free flights per year back to your home base. Mobilization and De-Mobilization flights are paid for by our client.
